MADIRAN Réserve Royale (Vieilles Vignes)

   

GRAPE VARIETALS : CEPAGES : 80 % TANNAT- 10% CABERNET FRANC- 10% CABERNET SAUVIGNON

MADIRAN RESERVE ROYALE (Old Wines) are wines suitable for long ageing, made from selected older wines.

They have a higher proportion of TANNAT (80 %), the main Madiran varietal, high in tannin, with the natural alcoholic strength and acidity which with a longer maceration of 15-21 days give the wine the balance essential for ageing wines.

Before the winter, once the alcoholic and malolactic fermentations are completed, the wine is drawn off and filtered before maturing in new oak barrels.

MADIRAN RESERVE ROYALE CRU DU PARADIS wines are recommended for drinking with : small game, pheasant, partridge, hare, deer, wild boar, fresh foie gras (duck or goose).

MADIRAN Tradition

   
 

GRAPE VARIETALS : CEPAGES : 60 % TANNAT – 20 % CABERNET FRANC- 20 % CABERNET SAUVIGNON

TANNAT is the main varietal of the Madiran Appellation. It si grown only on the vineyards of the Val D’Adour where the favourable autumn climate allows the full ripening of the late varietal. Its intense tannin, its natural richness in alcohol (12-14°) and acidity (3.5 –4 ° total acidity) combine to give TANNAT all the elements essential for a balanced wine for ageing.

When young aromas of berries (blackcurrants, redeurrants, blackberries ) contrast with the fullness of the tannins. As the age the tannins develop roundness and finesse and a broad sensory palette of spice, cocoa and even vanilla. Depending on the vinification and ageing these two families of aromas are blended to a greater or lesser degree and give TANNAT its complexity and originality refined and intensified through ageing in barrel.

CABERNET FRANC AND CABERNET SAUVIGNON. Fruity, versatile and uncomplicated to vinify the CABERNETS give additional aromas to MADIRAN CRU DU PARADIS and soften the tannic vigour of the TANNAT through its smoothness and harmonious flavours.

The grapes with stalks completely removed, macerate for 9 –12 days in stainless steel tanks where the temperature can be controlled during fermentation. Before the winter, once the alcoholic and malolactic fermentations are completed, the wine is drawn off and filtered before maturing in oak barrels.

MADIRAN CRU DU PARADIS is bottled after 2 years in barrel. We generally wait two and a half years before starting to sell each vintage.

MADIRAN CRU DU PARADIS wines are particularly recommended for drinking with : - red meat, dishes with sauces, magret (breast) and confit of duck, Pyrennean cheeses.

GRAPE VARIETALS : CEPAGES : 30 % GROS MANSENG – 30 % PETIT MANSENG – 30 % ARRUFIAC – 10 % PETIT COURBU

These four grapes are vintaged during the first days of October. At the end of the fermentation, the wine after clarification and filtration, passes its quality control at the end of the winter. The « PACHERENC SEC » are aged in new oak barrels for approximately three months. Ideal with fishes and crustaceous.

PACHERENC Du Vic-Bilh Moelleux Tradition

   
 

CEPAGES : 80 % GROS MANSENG – 20 % PETIT MANSENG

From end October to mid November, MANSENG, COURBU and ARRUFIAC grapes are selected and blended to create the « MOELLEUX ». To avoid oxydation of the must the vintage is pressed as soon as possible and the grape juice is settled through chilling. The vinification is carried out at au controlled temperature (at 18-24°C).
The alcoholic fermentation is halted when the ideal alcohol – sugar balance (13° for 3° sugar) has been achieved.
The wine, after clarification and filtration, passes its quality control in the Spring. The vintage is fermented in stainless steel tanks
six months. Ideal with foie gras and hot goat’s cheese.

The PETIT MANSENG grape is the « king » varietal for the sweet wines of the Pyrennees. The beautiful autumns help bring out the full concentrated flavour of its small hard-skinned grapes.

It is not until DECEMBER that the grapes are picked and selected. To avoid oxydation of the must the vintage is pressed as soon as possible and the grape juice is settled through chilling. The vinification is carried out at a controlled temperature (at 18- 24 °C). The alcoholic fermentation is halted when the ideal alcohol – sugar balance (13° for 3° sugar) has been achieved.

The wine, after clarification and filtration, passes its quality control in the Spring. The vintage is fermented and aged in oak barrels for approximately 8 months.

This exceptional wine is still little known due to its limited production has an attractive golden yellow tint. You can detect the seent of plums and honey and the rich but still light flavours of quince jelly, acidulous fruits and chestnut. Ideal with foie gras and a peerfect dessert wine.

BÉARN Rosé

   
 

GRAPE VARIETALS : CEPAGES : 1/3 TANNAT – 1/3 CABERNET FRANC – 1/3 CABERNET SAUVIGNON

BEARN ROSE is produced by « bleeding » the grapes after macerating them for one night only. This wine is aged in stainless steel tanks and is bottled six months after the harvest.

Ce rosé est une invitation à l'épicurisme.

Cépages : 60 % TANNAT 20 % CABERNET FRANC 20 % CABERNET SAUVIGNON
Jolie robe à la teinte rouge rubis grenat foncé. Fin et harmonieux. Le charme de sa robe
soutenue, la finesse de son bouquet de fruits, la subtilité des saveurs et l'harmonieux
mariage des arômes confèrent à ce vin l'élégance des plus grands.
Accompagnement : Garbure, viandes rouges, plats en sauce, magret de canard,
